INSTANT FRESH TOMATO SAUCE
Cooked up by Tigger on the 10 July 2007.
This is one which was given to me a long time ago, and works really well with salmon. Take a punnet of cherry tomatoes, a pinch of sea salt, half a teaspoon of sugar, some black pepper and a glug of really good olive oil. Put the cherry tomatoes in a blender, add the sugar, salt & pepper and a good glug of olive oil - go easy at the start, you can add more later. Blitz until light frothy and moussy. Check seasoning, pour over salmon and serve straight away. NB - This doesn't keep as it tends to separate if left to stand, but it's freah and delicious....you could also add chopped herbs.
